Catering question, storing salad & sandwiches?

As long as you store food so its airtight and in the fridge they should be ok. As for the salad is there no one that could prep it for you in the morning? Salad will keep over night in the fridge but leaves can go bad quite quickly so I would advise for them to be done fresh in the morning.
